Abstract (en Anglais) : The nutritional and biological characteristics of the different classes of nutrients (proteins, starch, fibres, vitamins, minerals and phenolic compounds) are presented, in connection with the diversity of composition of the different grain tissues and the specificities of certain cereals, more particularly wheat soft and hard, barley and triticale. Cereal grains are essential energy foods, source of interesting nutrient beneficial for health, which are concentrated mainly in the peripheral layers (PC) of the grain. We have medicinal uses by their anticancer properties antimicrobial and antioxidant activities. The peripheral layers of wheat, barley and triticale grains are envelopes that protect the grains, they are eliminated during milling. These layers are an important source of micronutrients composed mainly of polysaccharides, phenolic acids, fibers, lignin and proteins (mainly albumins and globulins located in the aleurone layer). This study was carried out on four cereal species, soft wheat (Triticum aestivum) Ziden and Boumerzoug, durum wheat (Triticum durum) Chen's, triticale (Triticale) Ksar Sbahi and Beni Haroun and barley (Hordum vulgare) Saida and Fouara harvested in Algeria on 2017, using two methods of extraction (maceration, infusion) and two solvents (ethanolic and methanolic). A comparative study of the interspecific variability of these species based on the study of morphological aspects (structure of tissues) by scanning electron microscopy, nutritional by highlighting the dosage of minerals, fibers and proteins and biological (phenolic compounds), followed by a characterization of the polyphenols by high pressure liquid chromatography (RP-HPLC-LC-2030C 3D). The antioxidant activity was also evaluated in this study by the hydrogen transfer method (DPPH) and the single electron transfer (Ferric Reducing Antioxidant Power Assay). The results show firstly that the scanning electron microscope observation of the peripheral surface layers that they had almost similar structures for the varieties Chen's, Ziden and Boumerzoug. It is noted that wheat in general are rich in Calcium with values of 10.65 and 8.07 ppm for Chen's and Ziden respectively, the results showed that the different varieties of CP have a low sodium content unlike potassium (329.33 mg/l) for triticale Beni Haroun remarkable with triticale, on the other hand the magnesium concentration is almost similar for the three varieties Chen's, Ziden and Saida. The highest percentage of crude fibers was obtained with the variety (Durum wheat) which is 1.5%, while the protein content seems low 0.007 mg/ml for Chen's and 0.002 mg/ml for Ziden. The extracts (Methanol) obtained which are the most effective, are richer in total polyphenols (550± 0.34 μg EAG, EQ /mg E) and (427± 1.2 μg EAG, EQ /mg E), respectively in durum wheat (Chen's) and the soft wheat variety (Ziden), as well as flavonoids (619± 1.5 μg EQ/mg E) followed by triticale (Beni Haroun), while the barley variety (Saida) is the most effective among the ethanolic extracts. The results of characterization of polyphenols by HPLC show that the crude extract of the Chen's variety contains three phenolic acids gallic acid, syringic acid and hydroxybenzoic acid. The highest IC50 was obtained with the methanolic extract of the two varieties of soft wheat (Ziden) and durum wheat (Chen's) (IC50 = 1.7; IC50 = 0.74) respectively, on the other hand the most efficient of ethanolic extract is barley (Feouara ) (IC50=1.91).
